What is the best way (if any) to find the average length of our EFT memberships? By 'length', I mean the length of the period of time between when the membership begins and when it's terminated.

There is no easy way to determine this. Given the start/stop frequency of members it actually proves to be very complex.
I can put you in touch with someone who has developed some custom queries to analyze memberships, and he may be willing to share those queries with you for a small fee.
