Why is there no deposit feature where I can ring in a customers money under their name and then they may use it as the please later?

I'm not clear on your question... as you seem to describe two things.. 1) a deposit or 2) gift cards
If you want to give a customer money, sell them a gift card through POS.
For deposits, here is the best way to handle it (using a party as an example)
Create a "Birthday Party" Product
Create a "Birthday Party Deposit" Product
When they pay the deposit, sell them the "Deposit" product ($50 for example)
When they actually attend the party and want to pay for the whole thing, sell them the "Birthday Party" product ($200) and RETURN the "Deposit" product in the transaction.
The balance due will then be $150 which you'll collect. The Birthday party account will have received $200, and the deposit account will have been zeroed out.

what if using just a generic "gift card" product and in Andys example
- first sell "gift card" product for $50
- then at the end sell party for $200 and return gift card for $50
this way it's easier to see form the products admin sales if there's still gift cards to be used.
is there any issues with that approach?
We have been using gift cards as deposits and it has been working out great. What we do is schedule events in a calendar and then when we receive money for a deposit we create a code that goes into the event in the calendar for later use. As long as the codes are single use, everything works great.
