I've added F-keys to the select customer window that allows you to quickly jump to either the search list, recently used, or recent check-ins. This will be available in the next update.

No, they are not required. You can use the typed or doodle signatures within the gym if you (and your legal council) are comfortable with it. Some gyms are doing exactly this.
